New post! I was thinking about what I wanted to do for blog posts in the last few months of last year. It occurred to me that I don't really talk about what I do, want to do, and what I think anymore. Some of that is a privacy thing, but some of it that I am not sure if anyone is interested! Pantry Challenge Reimagined Update: A lot was used up, but the pile didn't seem to go away!

The first pic is Applesauce Muffins which were awesome! I used up a jar of home canned applesauce (2015) and more oat flour. The second pic is Blueberry Oat Muffins which were delicious. I used more instant oats and pastry flour. Breakfast is taken care of for the week.

Third pic: I'm back to baking bread. I made Honey Oat Bread from @therusticelk and it is divine. The perfect bread for toast and sandwiches!

Fourth pic: For lunch today was Cheesy Salsa Verde Chicken & Rice from @iowagirleats and it was delicious. I wish I had taken pics of the final product!

Fifth pic: Supper last night was lentil stew in the instant pot. So good and comforting!

New post! Food intolerances and allergies are becoming an issue for many people. In becoming prepared, we have to adapt and overcome these issues not just in our daily diets but also in our stockpiles. Ingredients and ingredient list become very important in making sure we avoid any food triggers.

In our household, we deal with lactose intolerance. I grew up with my mother being severely lactose-intolerance and have a daughter who is the same. We have prepared for this just like we would anything else and I share what we have done to be ready for now and later.

The world is going crazy, y'all.

That is the long and short of it. History has shown us good and bad times. It has given us clues about what happens when the world is about to do a 180 and I think the indications are here now. If you don't see the signs of something happening soon, I don't know what to tell you.

Prices are getting worse by the day at the stores. Building materials climbing in price again. Food costs are rising. Shortages are being noticed at most grocery stores. Availability of goods is still an issue. Rising vehicles prices - new or used - are unaffordable for many people. Prices at the gas pumps are rising too. The list goes on, but we are headed for some more challenging times.
